The olfactory structure of Sur Mesure is shaped as a cohesive olfactory arc, where layers reveal themselves smoothly and sequentially. The signature of Jean Airoldi is evident from the opening to the final trail. No excess details, only what works, and the composition keeps a clear direction.

At the note-group layer the profile is anchored in Gourmet, Sweet and Fruit.

Without strict stage separation the notes arrive together with a soft dessert-like mood: Almond, Caramel, Chocolate, Coconut, Pastry, Pineapple and Vanilla. In this case 7 notes act as one integrated frame, creating a delicious gourmand trail that reads as cohesive from the start.
